Recipe Of The Month: Chicken with Pineapple Sage, Ginger and Lemon
Ingredients:
2 chicken skinless chicken breasts
olive oil
sea salt
1 tablespoon butter
1/4 cup minced ginger root
1/4 pineapple sage leaves
2 lemons
Directions:
Slice the chicken breasts in half to make them half as thick.
In a skillet, pour a smaller layer of olive oil.
Sautee the chicken breasts in olive oil until brown on each side. Sprinkle with sea salt.
On your cutting board, take fresh ginger root and mince. Wash the pineapple sage leaves and chop, then keep mincing the ginger and pineapple sage leaves together.
After the chicken breasts are lightly browned, throw in a tablespoon of butter along with the ginger and pineapple sage. Squeeze the juice of two lemons into the sauce as you are cooking. Simmer the sauce until the chicken breasts are cooked through. Serve immediately.
What’s so healthy about this recipe:
I had three very lush pineapple sage plants growing in my front garden. Finally, I decided I needed to do something with them. Pineapple sage is used in traditional Mexican medicine as a natural healing remedy for anxiety and depression as well as for lowering blood pressure.
Ginger root is a natural healing remedy for all sorts of digestive difficulties, including gas, bloating, heartburn, indigestion, nausea and ulcers. It is helpful for the common cold and for reducing all sorts of inflammatory conditions such as arthritis, headaches and muscle and joint pain.
Sea salt is high in minerals.
Lemon juice is antibacterial, antibiotic and full of natural antioxidants.
