What’s so healthy about this tea?

Notew: I realize that when it comes to recipes, I am at times incredibly imprecise. When I buy ginger, I usually shop at someplace like Whole Foods where you buy large chunks of ginger. For this recipe, I purchase a chunk of ginger as big as my hand.

As far as the water goes, start with 48 ounces. Personally, I love ginger and can drink my ginger tea pretty strong, but you may want to add more filtered water to dilute it if you are taken aback by the intensity of your ginger.

Ginger Goji Berry Tea

Ingredients
  

  • 1 palm sized cluster of fresh ginger
  • 8 ounces goji berries
  • 48 ounces filtered water

Instructions
 

  • Wash the ginger and chop into smaller pieces.
  • Place ginger in a high speed blender such as a Blendtech or Vitamix with 8 ounces of water. Blend until liquified. Pour liquid into large pot on your stove or a crockpot.
  • Place the goji berries in your blender along with 8 ounces of filtered water. Blend until liquified. Pour liquid into your pot or crockpot along with the ginger water.
  • Add the rest of the filtered water. Bring ingredients to a boil until heated through.
  • Serve as a tea and refrigerate the rest. You can reheat the mixture to drink throughout the day.
