Ingredients:
Serves 4
- 28 ounces organic chopped Pomi tomatoes
- 1 cucumber chopped
- 1 jalapeno chopped
- 1 cloves garlic
- 2 Tb red wine vinegar
- Juice from 1 lemon
- 2-3 Tb honey
- Sea salt to taste
Combine in a blender or food processor
- ½ cucumber peeled and chopped
- ½ red onion chopped
- 1 green pepper chopped
- ¼ cup cilantro
Toss with the soup to add consistency. Add a dollop of sour cream if liked.
